Roasted Asparagus with Mustard Tarragon Vinaigrette Recipe
Ingredients:
1 bunch of fresh asparagus, trimmed
2 tablespoons olive oil
Salt and black pepper to taste
For the Mustard Tarragon Vinaigrette:
2 tablespoons Whole Grain mustard
1 tablespoon honey
3 tablespoons Champagne vinegar
1/2 cup olive oil
2 tablespoons fresh tarragon, chopped
Salt and black pepper to taste
Instructions:
Preheat the oven to 400°F (200°C).
Place the trimmed asparagus on a baking sheet. Drizzle with olive oil, and season with salt and pepper. Toss to coat evenly.
