As the skilled chef behind the counter, I take pride in presenting a diverse menu that satisfies every palate. The star of the show is the beer can chicken, perfectly roasted to juicy perfection. Accompanying this main attraction are the flavorful roasted mushrooms drizzled with chimichurri sauce, adding a refreshing twist to the meal. To elevate the experience further, I introduce a unique creation - the three-way carrot. This innovation features a carrot prepared in three distinct ways: smoked, pureed, and transformed into a Carolina barbeque sauce.   2. 1/2 cup paprika

  3. 6 T Black Pepper

  4. 6 T salt

  5. 4 t chilli powder

  6. 4 T Onion Powder

  7. 3 t Celery Seed

  8. 2 t Cayenne Pepper

Instructions:

Combine in bowl.

Instructions for Chicken:

  1. Preheat your grill to medium heat, around 350°F (175°C).

  2. Remove the giblets from the chicken and pat it dry with paper towels. Rub the chicken with olive oil and season generously with salt, pepper, and your favorite dry rub or seasoning.

  3. Open the beer can and take a few sips (or pour out about half) to make room for the steam to flavor the chicken.

  4. Place the beer can on a flat surface and carefully lower the chicken cavity over the can, making sure it stands upright with the legs on the bottom.

  5. Transfer the chicken and beer can to the grill and carefully balance it so it stands upright. Close the lid and let it cook for about 1 to 1.5 hours, or until the internal temperature reaches 165°F (74°C) in the thickest part of the chicken.

  6. Once cooked, carefully remove the chicken from the grill, using tongs to support it from the bottom of the beer can. Let it rest for a few minutes before carefully removing the beer can.

  7. Carve the chicken and serve with your favorite side dishes for a delicious meal that everyone will love.
