Lemon Pork Tenderloin Roast Recipe
Ingredients:
1 pork tenderloin (about 1.5 lbs)
2 lemons
4 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
Instructions:
Preheat the oven to 375°F (190°C).
Zest and juice the lemons.
In a small bowl, mix together lemon zest, lemon juice, minced garlic, olive oil, dried thyme, dried rosemary, salt, and pepper to create the marinade.
Place the pork tenderloin in a shallow dish or resealable plastic bag. Pour the marinade over the pork, making sure it is well coated. Marinate in the refrigerator for at least 30 minutes, or up to overnight for better flavor.
Fire the tenderloin in the oven @ 375°F for 20 mins.
Drop the temperature to 330°F, until the internal temperature of the pork reaches 135°F (63°C). About 60-90 mins. Check every 30.
Arrange lemon slices around the pork in the skillet for the last 10-15 mins.
Remove the skillet from the oven and let the pork rest for 5-10 minutes before slicing. Pork should keep rising to an internal temp of 145°F
